Chicken Parmesan

I had defrosted a double chicken breast with the idea of roasting it for dinner.  But I really felt like pasta soooo........ the chicken became chicken parmesan served with a side of pasta.

An easy dinner to put together. Boneless chicken breast, pounded flat, rubbed with a little fresh garlic,  dipped in flour seasoned with salt and pepper, beaten egg and fresh bread crumbs seasoned with freshly grated parmesan cheese.   Pan fried and topped with a homemade tomato, garlic, basil sauce and slices of fresh mozzarella.  Served with a side of spaghetti.
