Halibut with Lemon Dill Butter

I needed something quick for dinner last night.   I worked at the Victoria store yesterday which means  I'm later getting home.  Closer to 6:30 than my normal 5:20.   Initially I thought I would just stop on my way out of Victoria and get take out.  Maybe Chinese.  But I would have had to go further out of my way and I didn't feel like doing that.  

So I stopped closer to home and picked up fresh halibut fillets.   

This is one of those no-brainer dinners that can be on the table pretty quickly.   
The rice takes the longest to cook, time for a big pot of water to boil, 10 minutes for the rice to cook and 10 for it to rest, while the fish finishes off in the oven.  Finished off with a drizzle of melted butter, and fresh squeezed lemon juice.

Served with fresh steamed asparagus.

A 30 minute meal.


  1. Another one of your absolutely mouth-watering meals. I'm going to check out the halibut at the grocery store today. It won't be fresh like yours but what can you expect in south Texas.

    When fresh isn't available here ( about 4 months Nov to March) I buy the frozen. Halibut that is going to be sold as frozen is frozen right at sea so it is almost as good as fresh caught.
