I worked yesterday and had a late lunch so I wasn’t really interested in cooking a big dinner. So, I decided to make Moe happy by cooking two of his favourites – Eggs and Baked Potatoes.
I baked small russet potatoes, hollowed them out, filled with a little butter and cheese, topped with an egg, fried ham and a little cream and baked at 400° until the eggs were set. Sprinkled with chopped scallions and served with toast.
According to Moe these were fantastic.
I have never seen this Ann..a whole meal! It looks comforting and good.

I've got to try this – has all of my food groups (pork, potato, cheese, egg) in one dish.

Theses look so tasty Ann. I will have to try them soon one day. Baked potatoes are one of my all time favorites and the addition of the egg sounds great.
