Deconstructed Waldorf Salad


I made Moe another salad this week - A deconstructed Waldorf Salad. You can find the original recipe on  the British Larder.  



I made a couple of adjustments. 
I cheated, using Hellman's Mayo as the basis for the dressing. 
Doctored it up with fresh garlic, Dijon mustard, salt, pepper,  fresh lemon juice and a little rice wine vinegar for a touch of sweetness. 
I subbed Gorgonzola for the Oxford Blue. 
And the grocery store was out of watercress so I added red cabbage for a bit of colour.   

Moe loved this salad.   
I think the next time I make it for him I will also add green onion or chives and I like the idea of adding dates.  
Dates and Gorgonzola go beautifully together.

  4. That is, without a doubt, the most beautiful Waldorf Salad I have ever seen. It's gorgeous! Absolutely brilliant to sub the red cabbage for the watercress; I like it better your way. (I like your other suggestions too.)
