Deconstructed Waldorf Salad

I made Moe another salad this week – A deconstructed Waldorf Salad. You can find the original recipe on  the British Larder.  

I made a couple of adjustments. 
I cheated, using Hellman’s Mayo as the basis for the dressing. 
Doctored it up with fresh garlic, Dijon mustard, salt, pepper,  fresh lemon juice and a little rice wine vinegar for a touch of sweetness. 
I subbed Gorgonzola for the Oxford Blue. 
And the grocery store was out of watercress so I added red cabbage for a bit of colour.   
Moe loved this salad.   
I think the next time I make it for him I will also add green onion or chives and I like the idea of adding dates.  
Dates and Gorgonzola go beautifully together.
