Preserved Garlic in Olive Oil

I first saw this preserved garlic on Monique’s delightful blog  La Table De Nana.

I finally got around to making a couple of jars.  

 

One of our local vegetable stores had half pound packages of peeled garlic cloves on for $1.00.  Hard to beat that price.   
All I had to do was empty the package into the processor and pulse.   

Cheap and easy.  

Following the recipe I added the juice of one small lemon and topped with olive oil. 
Needs to be stored either in the fridge or in the freezer.

    How long does it last in fridge? I have a TON to store.

  4. Jennifer, everything I’ve read on storing garlic in oil is to keep it no longer than 4 days in the fridge. But it can be kept in the freezer for a number of months. You can just use a spoon to scoop our what you need. https://postharvest.ucdavis.edu/files/251548.pdf
