Parmesan Crusted Halibut

This is one of my most repeated meals.

An easy dinner to put together quickly on a work night.

The fish is dipped in seasoned flour, beaten egg and rolled in fresh grated bread crumbs that are seasoned with parmesan and lemon zest.

Since I had grounded up more bread crumbs than needed for the fish, I sauted butter with a little minced garlic, added the breadcrumbs and tossed them in the butter garlic mixture and then toasted them over low heat until the bread crumbs turned golden.  Stirred in a little fresh ground parmesan and sprinkled  the buttery crumbs over steamed broccoli.

Served with roasted potatoes.

  3. Oh my, this is my favorite way to prepare halibut. I use the same technique with razor clams. Those wonderful toasted bread crumbs really dressed up the broccoli.
