If you don't like a particular food, you should try it every seven years. You might find that your taste buds have changed.
That is how it was for me and Clams.
Moe has always loved clams. I didn't like them at all.
We were on vacation in Oregon's Wine Region and enjoying the wonderful restaurants the region had to offer. One night in Newberg, I can't remember the name of the restaurant, Moe ordered Clams as his main course. He raved about them so much I had to give them another try. That is when I became a believer in the Seven Year Rule.
I have loved clams ever since.
My favourite way to serve them is with pasta.
I stopped by Cowichan Bay Seafoods on the way home from work and picked up the clams that I had ordered earlier in the day.
This dinner takes no longer to make than it does to boil the water and cook the pasta.
First thing I did was put the water on to boil.
Next, I heated olive oil in a large saute pan. Added a number of little cherry tomatoes and sauteed until they started to colour. Added three minced garlic cloves, a splash of white wine and another splash of chicken broth and seasoned with hot red pepper flakes and dried basil.
Covered, turned down the heat and let it simmer while the pasta cooked.
Just before draining the pasta, I tossed the clams into the sauce, covered again and cooked just long enough for the clams to open. Just a minute or two.
Tossed in a handful for fresh chopped Italian parsley and fresh basil
