Decadent Caramel Rice Krispie Squares

A decadent version of Rice Krispies Squares.
 A thicker version of the traditional rice krispies square topped with 
a warm caramel sauce that seeps down through the square.
The idea for these squares comes from 
Nan tops her squares with a caramel sauce.
Because her squares are not quite as thick the  sauce forms a wonderful caramel layer.
I used my regular caramel sauce which does not contain corn syrup.

 The same one I use to top Bread and Butter Puddings,
Sticky Toffee Muffins, Puddings, Ice Cream, etc…

Decadent Caramel Rice Krispies Squares

Regular Rice Krispie Squares
(thicker version)

1/2 cup butter
400 g Marshmallows
Pinch of salt (optional)
1 tablespoon vanilla extra
9 to 10 cups Rice Krispies

Melt butter and stir in marshmallows

 and pinch of salt. 
Stir until smooth. Remove from heat. Add vanilla and rice krispies. stir until well coated.

Pour into buttered 9 X 13 inch . (I use a Pyrex glass) cake pan.

Caramel Rice Krispie Squares

Prepare rice krispies squares.  Set aside.

Caramel Sauce

1 cup butter
1 cup heavy cream
1 cup brown sugar
1 cup white sugar
pinch of salt
vanilla
Coarse Sea Salt ( I use Maldon Salt Flakes)

Place butter, cream, sugars and pinch of salt in a heavy sauce pan. 
Simmer until caramel reaches the soft ball stage.

Remove from heat.  Stir in vanilla.  Pour caramel over rice krispies
squares.   Caramel sauce will slowly seep down through squares. 
Sprinkle with sea salt and refrigerate until cold.

    Oddly, I never had these growing up. It is always the first thing Mr. T. goes for when we are some place that they are served. I had no idea how much he liked them. These sound perfect. I would love the caramel sauce on them!

  3. Oh,my. Rice Krispie treats are tempting enough on their own, but add caramel and they are irresistible!!! These sound fantastic, Ann.

    I made these last night, it's hard to stay away from them. This morning I figured, perfect for breakfast since they are made with Rice Krispies! Now I need to justify eating them for lunch.

    How much vanilla & course salt do you add to the caramel sauce?

  7. Girlyschmoo, just a pinch of salt in the caramel sauce. At least two or three teaspoons of real vanilla extract, not artificial. And just a little sprinkle of sea salt on each square. Less is more. You do not want the squares to be \”salty\”. I prefer using Maldon Sea Salt flakes.
