Greek Ribs


Had a craving for grilled baby back ribs.
This is a very simple meal to make and can be done on a work night.
 
The ribs were presalted on Thursday and then seasoned Friday morning before I left for work.
Rubbed with garlic (minced on a microplane), oregano, pepper and a squeeze of lemon juice.
First thing I did when I got home from work was turn on the grill to preheat.

The ribs only take about an hour grilled over indirect heat, and need very little attention, except to turn them once or twice.

While the ribs cooked, I took five minutes to prepare a simple salad and mix up a Vinaigrette.

Before removing from the grill
I squeezed the juice of a lemon over both racks.
