Prime Rib for Two

I love whole meals  cooked on the grill.

And this dinner is one of my favourites.

This little two pound prime rib was presalted on Sunday and grilled on Tuesday.

Taken off the grill when the internal temperature was 112°F
and left to rest while the vegetables finished cooking,

To serve, I just removed the bone and cut the roast into two thick slices.
