Mexican Dinners

Another catch-up post. 

 This one sharing the Tex-Mex/Mexican meals we have had in the last few weeks.

My favourite Chili.
 Topped with cheese, onion and salsa and served with home-made flour tortillas.

Chicken Enchiladas with homemade Corn Tortillas.
Matt (our son)  makes the corn tortillas.

This is another favourite Mexican dinner.

"Filete Al Chipotle"
(Filet of Beef with Chipotle Chile Sauce)

I started the dinner before leaving for work.

Put a pot of pinto beans on to simmer.
And prepared the Chipotle Tomatillo Sauce and presalted the steaks.

Matt made the corn tortillas and had them ready by the time I got home from work.

The tortillas were deep fried and the steaks, topped with cheese,
 and placed on the tortilla and then coated with the sauce.

Fried and shaped three of the tortillas into little bowls for the beans.

The original recipe calls for beef tenderloin and which is how I normally make it.
 But this time I  made the recipe with grilled New York strips.

Chile Rellenos


Blackened on the Grill
peeled and stuffed with cheese.



Battered and deep fried and 
topped with a chili sauce.


Served with a side of pinto beans
in a fried corn tortilla bowl.

  1. Those are some great looking meals and sure made me hungry. We have a big pot of green chili simmering on the stove as I write this.

  2. It all looks delicious. I am intimidated by Mexican food - maybe because I dislike cilantro, but I love all the other flavors. I am trying to learn how to make flour and corn tortillas.
